I'm looking for anything Spuffy with horses, they'd probably be all human. completed would be preferred but not necessary

There is a story called Little Missy; The Marker by Spufette it might br what you are looking for.

Someone might have a saved copy of "Love on the Run" by Ashlee (the story is not online anymore). In it, Buffy is a jockey who races horses owned by Spike's family.

Edited to add: I just went through it to make sure it read okay and where it ends could actually be the ending. I indicated it was continuing to chapter 23 back in 2005 when I got it but the end of chapter 22 seems like an ending so I don't know if it goes longer than that or not. Anyway, it looks really good and is definitely all mixed up with horses and trainers.
