Fractured Fairy Tales Pt 1 by paganbaby has a Hansel and Gretel thing going on in it.

When I contacted paganbaby last year there was still an intention to write more but at the moment it remains a WIP overall with only this part.

I don't know whether these would necessarily count as being based on fairytales so much as they have fairytale aspects.
