I really like Doyle's character but he doesn't often pop up in Spuffy fics. Sometimes his name is used, or more often he is referenced in relation to Angel/AI crossovers, but he doesn't really play a main role with Spuffy. I have come across a couple of Spuffy fics where he has a proper part to play - It Came Upon A Midnight Clear by Holly, the Lost In Time series by spikeskat and the AH fic Little Sister, Don't You by Brat8.

Can anyone think of any others where Doyle plays a proper role, preferable verse based rather than AH, but just any good Doyle characterisation and a decent part to play.

Never Be the Same Again by Maryperk is a great fix and Doyle dose play a role in it.

I really cant remember the title or the author but the synopsis is Buffy becomes immortal and before she can discuss it with Angle, he leaves. Buffy heads off to Europe where she learns magic and to cook. She meets Spike in Paris and they become mates. Move to LA and they start a detective agency with Wesley. Doyle, Lorne, Gunn & Fred join them. Doyle and Buffy speak Gaelic to each other.
Hopefully someone else remembers the title and author

I think this is that story. I haven't read it but Spuffy do meet in Paris and looked toward the end. Doyle was in the later chapters.
